We will continue our culinary tour of Fried Chicken by paying homage to Big Bob Gibson who created Alabama White Sauce. This tangy sauce is a staple of Northern Alabama and pairs well with our Phat Birds fried chicken, Bourbon laced desserts and craft cocktail offerings by Irene from Happy Hour Agency.

The corn fritter is a savory snack in the Southern United States and Indonesia where it’s called perkedel. Ours are loaded with fresh corn cut off the cob, a touch of cream, tangy cheddar cheese and mild chives and served with our signature comeback sauce – so good you’ll comeback for more!
Southern Fried Chicken with Northern Alabama White Sauce
Our signature Phat Birds recipe is brined overnight, seasoned with our special blend and fried crispy. We serve it with a drizzle of our version of Big Bob Gibson’s tangy white bbq sauce.

Sweet Potato Purée with Pork Cracklins

This side dish is our rift on a dish that resulted after the southern tradition of lard making. After rendering pork fat for 12 hours, crunchy crackling is left. Folks would roast sweet potatoes and crush the cracklin’ on top. We whip our potatoes to creamy perfection.
Vanilla-Bourbon Pudding Cake
Yaaasss! It’s the combo of 2 desserts in 1—the perfect marriage of pudding and cake. And you know how we love our bourbon at Phat Birds-- Bulleit Bourbon is mixed in a flawless batter with vanilla bean. Yaasss!
