In this hands on class we will be making a handful of dishes with one of my favorite vegetables; okra! We will make spicy okra pickles for you to take home and let ferment. We will also make southern fried Okra, a Sichuan style okra salad, a classic Indian okra dish and another classic southern dish, Okra with Corn and Tomatoe. We will discuss the various techniques involved in cooking okra to minimize the slime and use a variety of cooking techniques such as dry frying, fermenting, blanching, deep frying and sauteeing.
