I have always loved Chinese food and growing up Jewish in Brooklyn it is a part of my culinary heritage in an odd way. Come and learn in this hands on cooking class a wide array of techniques of cooking tofu: blanching, stir frying, deep frying, braising and more.

Ma Po tofu
Soft Tofu braised with chili paste, onions, garlic, ginger, chilis and chili oil. Hot and spicy! A tofu lover's delight. Served over rice, this is a personal favorite dish of mine and many others.
Orange Sauce Tofu
A nice tangy, slightly spicy orange sauce is prepared from freshly squeezed oranges. This sauce is served over fcrispy fried tofu and surrounded by steamed brocolli

Small Plate
A very flavorful broth made from a homeade stock from mushrooms and seaweed is flavored with shaoshing and soy sauce. Silky tofu is warmed in this broth with lightly cooked greens. A very simple to make and extremely satisfying dish.

flat tofu is a unique kind of tofu from northern China, made here by our friends at Tofu yu in Berkeley. Like the rest of the tofu in this class/meal, we will pick this up in the morning directly from the source. Cut into noodles, blanched and tossed with sesame oil, soy sauce and some condiments. Extraordinary textures and taste!
Braised tofu with Chinese Mushrooms
Hongshao Tofu shitake and enoki mushrooms are highlighted in this dish as firm tofu is braised with mushrooms and other vegetables in stock with 3 kinds of soy sauces. Pass the rice!
