Naturally leavened bread can be found throughout California's culinary culture. The slow rise, natural yeast methods produce bread flavors far beyond any dough that took shortcuts. In a traditional pizza town like New Haven, Connecticut you'll find the famous "Garlic Clam" and "Mashed Potato Pizza," among the classic tomato pies. Fresh New Haven-style ingredients atop of a perfectly fermented sourdough crust? Sounds like a perfect pizza marriage.

Roasted Beet Salad
Appetizer
Olive oil roasted beets atop a bed of farmers market arugula, with a little bit of goat cheese and spices. No New Haven tie in here, just a good way to start a pizza party.
Original Tomato

In the early days of pizza, cheese was an added topping. If you ordered a plain pizza, it only came with tomato sauce. While this is still traditional in New Haven, I've added chopped tomatoes and farmers market basil to make this pie a true tomato feast.
Four Cheese Pizza

A classic alternative to the "Plain cheese," this white pie combines mozzarella, parmesan, pecorino, and ricotta, with freshly caramelized onions.
Clam and Garlic

A real New Haven classic, this pie combines a blend of Italian herbs, hard cheeses, garlic cloves, and baby clams. Hopefully you aren't on a first date.
The Mashed Potato

Red pepper infused olive oil is used to make these slow boiled mashed potatoes, which combine fresh rosemary, parmesan, and bacon to bring you a pizza unlike any you've had before.
