Eggs, chorizo and potatoes are the right way to start your day.
1 white onion, chopped
1 clove garlic, chopped
1/3 cup of chorizo, chopped
1/2 cup of kale, chopped
1 boiled potato, skinned and cubed
1 teaspoon of paprika
1 half avocado, chopped
Salt and pepper, to taste

Heat up some olive oil in a pan, throw in your onions. Cook for 3 minutes. Add in the chorizo and garlic. Cook for 5 minutes.
Add the kale and potato to the pan. Cook for 3 minutes.
Add the paprika, avocado and salt and pepper.
Transfer to a greased oven-safe pan and place the egg in the middle.
Broil until the egg is cooked. Season to your liking.
