1 white onion, chopped
1 garlic, chopped
1/3 cup chopped chorizo
1/2 cup of chopped kale
1 boiled potato, skinned and cubed
1 tsp pimenton
1 half avocado, chopped
salt and pepper to season
Let's get Cooking...
Heat up some olive in a pan, throw in your onions. Cook for 3 mins. Add in the chorizo and garlic. Cook for 5 mins.
Add the kale and potato to the pan. Cook for 3 mins.
Add the pimento, avocado and salt and pepper.
Transfer to an oven skillet, place and egg in the middle.
Broil until the egg is cooked.
Season to your liking.
