Karlo Prado is the owner of Carlito's Cocina, Portland Mercado's newest food cart. His soulful Puerto Rican cuisine has found its way onto the Oregonian's and Eater's list of best carts in Portland. A nomadic chef, Karlo has been cooking in kitchens across America for 20 years before landing here in Oregon. His "Eat It Maria!" dinner is an elevated extension of the food he prepares daily, rich with bold flavors and lots of love. Ten percent of proceeds will support Hurricane Maria relief.
