From the North to South, East to West, there is a plethora of different dishes which encompass Indian cuisine. This variation in regional Indian cuisine is not showcased in restaurants here in the States, and thats what forms the inspiration for my meal.
What you can expect:
Flavors predominantly from Western/Northern regions of India, dishes that I grew up with, devoured in eateries or learnt from family & friends.

Solkadhi: Famous staple from Goa, a coconut milk and kokum fruit concentrate cold soup/drink. It has a slightly sweet and sour aroma and imparts a refreshing sour taste and beautiful lavender color to food preparations

Goan chicken curry w homemade crusty bread

A spicy chicken curry from the Western coastal city of Goa, made using browned onions, coconut, whole spices and tamarind.

Served with a homemade crusty bread that's perfect for dipping, and a side cabbage-onion slaw.
