Almond Flax Chicken Tenders with Smoky Ketchup
- 1 cup almond meal
- 1/2 cup ground flax meal
- 2 tablespoons fresh rosemary, finely chopped
- 1/4 teaspoon pepper
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 6 chicken breasts, pounded thin and cut into long strips
- 1 egg, beaten
- Oil or baking spray for drizzling
Smoky Ketchup
- 1 teaspoon smoked paprika
- 1/2 cup ketchup
- 1/4 teaspoon Sriracha (adjust according to preference)
Steps
- Preheat oven to 400°F and line a baking sheet with parchment paper.
- In a large bowl, mix together the almond meal, flax meal, rosemary, pepper, salt, and garlic powder.
