Bacon Egg and Cheese Fried Rice
This perfect "whenever" meal features crispy bacon and garlic fried rice topped with mozzarella cheese and an egg.
Ingredients
Bacon Egg and Cheese Fried Rice
- 5 strips thick-cut bacon, sliced
- 1 small onion, diced
- 4 cloves garlic, minced
- 3 cups white rice, cooked
- 3 scallions, chopped
- 2 tablespoons unsalted butter, melted
- 2 tablespoons soy sauce
- Salt & pepper, to taste
Egg Mixture
- 2 eggs
- 1 tablespoon milk
- 1 cup shredded mozzarella cheese
Steps
- Cut bacon into half-inch pieces and cook in a sauté pan until golden brown. Set aside.
- To the same pan, add the diced onion and minced garlic; sauté in the bacon fat until translucent, about 1 minute.
