Bailey’s Irish Cream Cheesecake

Ingredients

Crust

  • 1 (10-ounce) package Mint Oreo Thins
  • 6 tablespoons butter, melted
  • Pinch of salt

Filling

  • 12-ounces of cream cheese, room temperature
  • 2 large eggs, room temperature
  • 2/3 cup granulated sugar
  • 1/2 cup Bailey’s Irish cream
  • 1 teaspoon vanilla extract

Ganache

  • 1/2 cup heavy cream
  • 8 ounces semisweet chocolate chips
  • 4 tablespoons Bailey’s Irish cream

Steps

  1. Preheat oven to 325 degrees.
  2. In a food processor, pulse together all crust ingredients until smooth and combined.
