Banana Cream Pie with Oat Crust

Ingredients

Oat Crust

  • 1½ cups Quaker® Old Fashioned Oats, pulsed in a food processor
  • 1½ cups Quaker® Old Fashioned Oats, whole
  • 1 cup raw walnuts, pulsed in a food processor
  • 1 cup brown sugar
  • ½ teaspoon salt
  • 8 ounces unsalted butter, softened
  • 3 ounces unsalted butter, melted

Filling

  • ½ cup sugar
  • ¼ cup cornstarch
  • 2 cups half and half
  • 4 egg yolks
  • 3 tablespoons butter
  • 1½ teaspoons vanilla
  • 2 bananas, thinly sliced
  • 1-2 tablespoons granulated sugar

Topping

  • 1½ cups heavy cream
  • ½ cup powdered sugar
  • 1 tsp vanilla extract

Steps

  1. Preheat the oven to 350 degrees.
  2. Combine oats, flour, salt and walnuts in a bowl and set aside.
