Cake Batter Ice Cream

Cake batter confetti ice cream served with an upside down cone


  • 3 egg yolks
  • ½ cup whipping/thickened cream
  • ½ cup sugar
  • 1 tsp vanilla extract
  • 2 cups cream, whipped
  • 1 pkt confetti cake mix
  • 1/3 cup confetti sprinkles
  • 5 waffle ice cream cones
  • ½ cup confetti sprinkles
  • 100g white chocolate, melted
  • 1/3 cup confetti sprinkles
  • 5 maraschino cherries


  1. Add the egg yolks and sugar into a large microwave safe bowl and whisk together using a hand whisk. Add the ¼ cup of cream and vanilla extract and whisk until well combined. Microwave for 30 seconds at a time, whisk each time until the mixture thickens. It’ll take about 10 minutes. Allow to cool.
  2. Add 2 cups of cream into a large mixing bowl and use an electric hand mixer to whip to stuff peaks.
