Chicken Breast With Peanut Sauce

Rich and creamy, this chicken is totally dreamy!

Ingredients

Chicken Breast

  • 2 chicken breasts, skin off
  • 1/2 tsp turmeric
  • 1 tsp Thai red curry paste
  • 1/2 can of coconut milk (save the remaining ½ for the
  • sauce)
  • 2 tbsp soy sauce
  • Sesame oil, for frying
  • Salt and freshly ground black pepper, for taste

Peanut Sauce

  • 1 to 2 inches of ginger, peeled and grated
  • 1 small garlic clove, peeled and grated
  • 1 tsp Thai red curry paste
  • 1/2 cup peanut butter, smooth
  • 2 tbsp soy sauce
  • 1 tsp light brown sugar
  • 1/2 lime, juiced
  • 1/4 cup peanuts, roasted, salted, and roughly chopped

Garnishes

  • Coriander
  • Lime wedges
  • Red chili, sliced
  • Scallions, sliced
  • Peanuts, roughly chopped
  • Cooked rice

Steps

  1. In a medium-sized bowl, mix all the ingredients for the peanut sauce together. Once well combined, add the chicken breasts.
  2. Cover with Saran wrap, and marinate for at least 30 minutes. Optional to leave the chicken marinating overnight.
