Chocolate Blackout Cake

Ingredients
Ganache
- 600g dark chocolate
- 300ml thickened/whipping cream
Chocolate syrup
- ½ cup boiling water
- ½ cup cocoa powder
- ½ cup sugar
Chocolate Blackout Cake
- 1 stick unsalted butter, softened, plus more for the pan
- 2 1/4 cups all purpose flour
- 2 cups sugar
- ¾ cup cocoa powder
- 1 tsp baking powder
- 1tsp bicarb soda
- ½ tsp salt
- 1 cup milk
- ½ cup coffee
- ¼ cup oil
- 3 eggs
- 1 cup semi-sweet mini choc chips
Steps
- Add chocolate and cream into a large microwave safe bowl. Microwave for 20 seconds at a time, mixing each time until smooth.
- Cover with plastic wrap and set aside to set.
