Chocolate Blackout Cake

Ingredients

Ganache

  • 600g dark chocolate
  • 300ml thickened/whipping cream

Chocolate syrup

  • ½ cup boiling water
  • ½ cup cocoa powder
  • ½ cup sugar

Chocolate Blackout Cake

  • 1 stick unsalted butter, softened, plus more for the pan
  • 2 1/4 cups all purpose flour
  • 2 cups sugar
  • ¾ cup cocoa powder
  • 1 tsp baking powder
  • 1tsp bicarb soda
  • ½ tsp salt
  • 1 cup milk
  • ½ cup coffee
  • ¼ cup oil
  • 3 eggs
  • 1 cup semi-sweet mini choc chips

Steps

  1. Add chocolate and cream into a large microwave safe bowl. Microwave for 20 seconds at a time, mixing each time until smooth.
  2. Cover with plastic wrap and set aside to set.
