Chocolate Mousse Cake

  • 2 egg yolks
  • 15g granulated sugar
  • 140ml milk
  • 5g gelatin sheet
  • 180g chocolate, 58% or higher cacao content
  • 120g whipped cream

Graham Cracker Crust with Walnuts

  • 55g graham crackers
  • 15g walnuts
  • 30g unsalted butter


  • 3 kiwis
  • 4 bananas
  • For Serving:
  • Whipped cream (soft peaks), as needed
  • Mint leaves, as needed


  1. Submerge the gelatin in ice water until. Drain and squeeze to remove any excess water. Set aside.
  2. In a bowl, combine egg yolks and granulated sugar. Whisk until white in color.
