Chocolate Quinoa Bites

These guilt-free chocolate bites are great for a midday sweet treat!


  • 1/3 cup quinoa, uncooked
  • 2/3 cup water
  • 1 cup dates, pitted
  • 1/2 cup raw almonds
  • 1/3 cup peanut butter
  • 1/3 cup dark chocolate morsels
  • 1/8 teaspoon sea salt
  • 1/4 cup unsweetened shredded coconut for coating


  1. In a small saucepan, bring the quinoa and water to a boil. Cover and simmer until the water is absorbed (approximately 10-14 minutes).
  2. In a food processor, process the almonds until evenly chopped.
