Chocolate Quinoa Bites
These guilt-free chocolate bites are great for a midday sweet treat!
- 1/3 cup quinoa, uncooked
- 2/3 cup water
- 1 cup dates, pitted
- 1/2 cup raw almonds
- 1/3 cup peanut butter
- 1/3 cup dark chocolate morsels
- 1/8 teaspoon sea salt
- 1/4 cup unsweetened shredded coconut for coating
- In a small saucepan, bring the quinoa and water to a boil. Cover and simmer until the water is absorbed (approximately 10-14 minutes).
- In a food processor, process the almonds until evenly chopped.
