Coquito Cheesecake

Your favorite seasonal rum cocktail is even better as cheesecake.

Ingredients

Coquito Cheesecake

  • 3 packages (8 ounces each) cream cheese, softened
  • 3 eggs
  • 3/4 cup coconut milk
  • 1/3 cup condensed milk
  • 3/4 cup sugar
  • 1 tablespoon rum
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 3 tablespoons all-purpose flour

Crust

  • 1 cup graham cracker crumbs
  • 4 tablespoons butter, melted

Toppings

  • Shredded coconut, toasted

Steps

  1. Preheat oven to 350°F.
  2. Grease a 9-inch springform pan. Wrap the pan in heavy duty aluminum foil to make it waterproof.
