Coquito Cheesecake
Your favorite seasonal rum cocktail is even better as cheesecake.
Ingredients
Coquito Cheesecake
- 3 packages (8 ounces each) cream cheese, softened
- 3 eggs
- 3/4 cup coconut milk
- 1/3 cup condensed milk
- 3/4 cup sugar
- 1 tablespoon rum
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 3 tablespoons all-purpose flour
Crust
- 1 cup graham cracker crumbs
- 4 tablespoons butter, melted
Toppings
- Shredded coconut, toasted
Steps
- Preheat oven to 350°F.
- Grease a 9-inch springform pan. Wrap the pan in heavy duty aluminum foil to make it waterproof.
