Deluxe Mac ‘n’ Cheese With Short Rib and Truffle

Ingredients

  • 1 short rib
  • 1 tablespoon vegetable oil
  • 2 cups beef stock
  • 2 cloves garlic
  • 2 sprigs of thyme
  • 1/2 stick butter
  • 1/4 cup flour
  • 1 cup milk
  • 1/2 teaspoon ground black pepper
  • 1 cup Gruyere, grated
  • 1/2 cup Parmesan, grated, plus a handful to top
  • 3 cups cavatappi pasta, cooked al dente
  • 1/2 cup fresh breadcrumbs
  • Small handful parsley
  • Small handful thyme
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • Black truffle, to serve

Steps

  1. Preheat the oven to 250 degrees. Brown the short rib in a hot pan with vegetable oil. Transfer to an oven dish, and add the stock, garlic and thyme. Tightly seal the dish with foil and cook for 4 hours. Remove the foil for the last 20 minutes, or until crisped.
  2. Preheat the oven to broil. Butter a baking dish.
