Donal's Shepherd’s Pie

How to make Shepherd's Pie.

Ingredients

  • 2 tablespoons of olive oil
  • 1 large onion, chopped
  • 2-3 medium carrots, chopped
  • 11/2 pounds minced lamb
  • 2 tablespoons of thyme roughly chopped
  • 400 milliliters/1 1/2 cups beef stock
  • 2 tablespoons tomato purée
  • 2 teaspoons of Worcestershire sauce
  • 400 milliliters/1 1/2 cups beef stock
  • 2 tablespoons of thyme roughly chopped
  • 1.75 pounds potatoes, peeled and cut into chunks
  • 75g/1/2 stick butter
  • 100 milliliters/1/2 cup milk
  • 6 spring onions, finely sliced
  • Sea salt and ground black pepper to season

Steps

  1. Heat 1 tablespoon of olive oil in a medium frying pan over a medium heat and soften the onion and carrots for 5-6 minutes. Turn up the heat and allow the pan to get hot before you add the minced lamb and thyme.
  2. Using the a fork break up the meat and allow to brown and cook through for 3-4 minutes.
