EASTER MACAROONS

Whip your Easter into shape with these Macaroons

Ingredients

For the pastry cream:

  • 1 cup milk
  • 1/3 cup granulated white sugar
  • 1 tbsp corn flour
  • ¼ cup all-purpose flour, sifted
  • 2 eggs, room temperature
  • 1 tsp vanilla extract

For the coconut macaroons:

  • 1/2 butter, softened
  • 3/4 cup granulated white sugar
  • 3 eggs
  • ½ cup pastry cream
  • 1 tsp vanilla extract
  • 2 ¾ cup shredded coconut
  • ¼ cup corn flour
  • 10 oz dark chocolate
  • 7 oz mini easter eggs

Steps

  1. In a medium saucepan combine milk and half of the sugar. Bring to a boil.
  2. In a small bowl, mix the rest of the sugar, corn flour and all-purpose flour. Add the eggs and vanilla extract and whisk until combined.
