EASTER MACAROONS
Whip your Easter into shape with these Macaroons
Ingredients
For the pastry cream:
- 1 cup milk
- 1/3 cup granulated white sugar
- 1 tbsp corn flour
- ¼ cup all-purpose flour, sifted
- 2 eggs, room temperature
- 1 tsp vanilla extract
For the coconut macaroons:
- 1/2 butter, softened
- 3/4 cup granulated white sugar
- 3 eggs
- ½ cup pastry cream
- 1 tsp vanilla extract
- 2 ¾ cup shredded coconut
- ¼ cup corn flour
- 10 oz dark chocolate
- 7 oz mini easter eggs
Steps
- In a medium saucepan combine milk and half of the sugar. Bring to a boil.
- In a small bowl, mix the rest of the sugar, corn flour and all-purpose flour. Add the eggs and vanilla extract and whisk until combined.
