French Toast Casserole

Stale bread, old bananas, canned food, dry foods... they've all gotten a bad wrap, but this is not the end of them yet! Don't let this stuff sit in the pantry, don't let it go to waste - Frankie encourages you to stretch further and cheaper!


  • Leftover bread
  • 4 eggs
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 tablespoons granulated sugar
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 2 soft apples, cubed
  • 1/4 cup pecans, chopped
  • 2 tablespoons butter


  1. In a large mixing bowl, tear up leftover bread into 1-inch cubes.
  2. In a separate mixing bowl, whisk together eggs, cinnamon, nutmeg, sugar, milk and vanilla extract. Add bread and apples and toss until coated. Mix in pecans.
