Name: Fridge Clean Out Fried Rice

Ingredients: 1/4 cup vegetable oil; 1/2 onion, diced; 3 garlic cloves, minced; 1 tablespoon grated ginger; 4 eggs, beaten; 1 1/2 cup peas and carrots; 1 cup roasted cauliflower; 4 cups leftover cooked rice (or farro, quinoa, etc); 4 tablespoons soy sauce; 2 honey packets (2 teaspoons); 2 teaspoons sesame oil; 1 red pepper flake packet (1/4 teaspoon); 1/4 cup minced cilantro leaves; 4 scallions, sliced

4 cups leftover cooked rice (or farro, quinoa, etc)

Heat a large skillet over medium heat, add the vegetable oil, onion, minced garlic and ginger. Saute until tender, 5-7 minutes.

Add the rice to the pan and cook while stirring for 3-4 minutes. Stir in the eggs, peas, carrots and cauliflower, and cook until the egg is set.

In a small bowl, whisk the soy sauce, honey, sesame oil, and red pepper flakes.

Turn off the heat and stir in the sauce. Add the cilantro and scallions, toss and serve.
