Fried Rice-Stuffed Orange Chicken Wings

Ingredients
Fried Rice-Stuffed Orange Chicken Wings
- 1 tablespoon peanut oil
- ½ white onion, finely diced
- 3 tablespoons green onion, diced
- 1 ½ cups mixed vegetables, frozen
- 1 large egg
- 2 cups day-old rice
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
Wings
- 6 chicken wings, marinated
- 2 tablespoons peanut oil
- Zest of 2 oranges, and juiced
- 1 teaspoon sugar
- 2 tablespoons soy sauce
- 2 cloves of garlic, minced
- ½ teaspoon salt
- 1 tablespoon sesame seeds, for topping
- 1 tablespoon green onion, sliced and for topping
Steps
- In a frying pan on medium to high, heat peanut oil and sauté onion until translucent, about 5 minutes. Add green onion and mixed frozen vegetables, then stir to combine.
- Push mixture to 1 side, and drop an egg on the other side of the pan. Working quickly, break up the egg and cook to a scramble.
