Fried Rice-Stuffed Orange Chicken Wings

Ingredients

Fried Rice-Stuffed Orange Chicken Wings

  • 1 tablespoon peanut oil
  • ½ white onion, finely diced
  • 3 tablespoons green onion, diced
  • 1 ½ cups mixed vegetables, frozen
  • 1 large egg
  • 2 cups day-old rice
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar

Wings

  • 6 chicken wings, marinated
  • 2 tablespoons peanut oil
  • Zest of 2 oranges, and juiced
  • 1 teaspoon sugar
  • 2 tablespoons soy sauce
  • 2 cloves of garlic, minced
  • ½ teaspoon salt
  • 1 tablespoon sesame seeds, for topping
  • 1 tablespoon green onion, sliced and for topping

Steps

  1. In a frying pan on medium to high, heat peanut oil and sauté onion until translucent, about 5 minutes. Add green onion and mixed frozen vegetables, then stir to combine.
  2. Push mixture to 1 side, and drop an egg on the other side of the pan. Working quickly, break up the egg and cook to a scramble.
