Fritos® Cowboy Cornbread Casserole

Cornbread, Fritos, and meat are combined in this irresistible casserole. Don't knock it 'till you try it!

Ingredients

Cornbread Layer

  • 1 cup Fritos® Flavor Twists® Honey BBQ Flavored Corn Chips, crushed
  • 2 boxes Cornbread mix
  • ½ cup Sour Cream
  • ¾ cup Milk
  • 2 large Eggs
  • ½ cup Pickled Jalapeños, drained and chopped
  • 1 cup shredded Cheddar Cheese

Fritos® Cowboy Cornbread Casserole

  • 2 cups Fritos® Flavor Twists® Honey BBQ Flavored Corn Chips
  • 1 pound Ground Beef
  • 2 cans Navy Beans (or beans of your choice), drained and rinsed
  • 1 tablespoon Smoked Paprika
  • 1 tablespoon Chili Powder
  • 1 tablespoon Cumin
  • 1 tablespoon Garlic Powder
  • ½ teaspoon Kosher Salt
  • 1 Yellow Onion, diced
  • 1 Green Bell Pepper, diced
  • 1 10 oz can diced Tomatoes, drained
  • 1 10 oz can, drained

Steps

  1. Preheat oven to 400°F.
  2. In a large bowl, whisk together sour cream, milk and eggs until smooth.
