Grilled 3-Cheese Sandwich With Grilled Tomato

The secret to grilled cheese is using a real grill ... and lots of cheese, of course.


  • 1 loaf French bread
  • 2 large heirloom tomatoes
  • Salt and pepper, to taste
  • Chili flakes, optional
  • 4 ounces fontina cheese, shredded
  • 4 ounces white cheddar, shredded
  • 4 ounces Gruyere, shredded
  • 1 stick unsalted butter, softened


  1. Preheat the grill to 350°F.
  2. Slice the bread into 1/2-thick slices. Set aside.
