Ingredients

Grilled Chicken Sandwich With Spicy Slaw And Pickled Onions

  • 1 red onion, halved and thinly sliced
  • 1/4 cup red wine vinegar
  • 4 large boneless, skinless chicken thighs, preferably organic
  • Salt and pepper for seasoning
  • Vegetable oil for drizzling
  • 4 ciabatta square rolls, cut in half and drizzled with oil
  • 2 avocados, halved and thinly sliced

Dressing

  • 1/2 head red cabbage, thinly sliced
  • 2 jalapeños, halved and thinly sliced
  • 1/2 cup mayonnaise, such as Just Mayo
  • 1/4 cup red wine vinegar
  • 1 tablespoon honey
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper, freshly ground

Steps

  1. Combine the red onion and red wine vinegar in a bowl. Stir and set aside. Check occasionally and stir so the onions stay covered in the vinegar. Let sit for at least 30 minutes (the longer the better).
  2. Meanwhile, preheat your grill to 350°F.
