Grilled Citrus Hurricane

Chef Dale Talde brings us to the bayou as he creates a NOLA-inspired menu complete with Chargrilled Oysters, Black Pepper Shrimp Po’boys, finishes it off with Bananas Foster, and washes it all down with a Fruity Grilled Hurricane.


  • 2 oz light rum
  • 2 oz dark rum
  • 2 oz passion fruit juice
  • 1 orange
  • 1 lime
  • 1 Tbsp simple syrup
  • 1 tbsp grenadine
  • Garnish with grilled orange slice and cherry


  1. Cut the orange and lime in half and put flesh side down on the grill, and grill until charred.
  2. Pour all of the ingredients including the juice from the lime and orange into a cocktail shaker and shake.
