Grilled Corn Esquite

Host Lizzy Mathis helps Stefni prepare some Mexican dishes for her evening asada. Together they make Homemade Tortillas, Carne Asada, Spicy Avocado Toast, and Lizzy even makes Esquite with a killer corn hack.


  • 4 whole ears of corn
  • 2 tbsp Cilantro
  • 1 Jalapeno pepper
  • 1 Lime, juice of
  • 1/4 cup Mayonnaise
  • 1 Chili powder
  • 1/2 tsp Salt
  • 1/4 cup Cotija cheese


  1. Add corn to the grill. Grill till there are visible char marks. Set aside to cool.
  2. Chop Cilantro and jalapenos into a large bowl.
