Guacamole-Stuffed Onion Rings

Crispy, deep-fried onions rings stuffed with creamy guacamole is everything you crave in an appetizer.

Ingredients

Guacamole

  • 4 large ripe avocados, pitted and peeled
  • 1/2 cup diced red onion
  • 1/2 cup diced tomato
  • 1 jalapeño, seeded and diced
  • 2 tablespoons freshly squeezed lime juice
  • 2 tablespoons minced cilantro
  • Salt and freshly ground pepper, to taste

Dipping Sauce

  • 1 poblano chile
  • 1/2 cup full-fat sour cream
  • 1/2 cup mayonnaise
  • 1 clove garlic
  • 1/4 cup cilantro leaves
  • 2 tablespoons freshly squeezed lime juice
  • Salt and pepper, to taste

Onion Rings

  • 2 large yellow onions
  • 8-ounce block Monterey Jack cheese, cut into 1-inch cubes
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cayenne pepper
  • Salt and freshly ground black pepper, to taste
  • 3 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 cup crushed tortilla chips
  • Canola oil, for frying

Steps

  1. In a large bowl or mortar and pestle, add the avocados and mash into a chunky paste.
  2. Add the red onion, tomato, jalapeño, lime juice and cilantro; stir until everything is combined. Set aside.
