Hasselback Bacon Potatoes

These delicious potatoes are are fully loaded with cheese and bacon.


  • 4 large potatoes
  • Queijo reino cheese (a strong-flavored, dry and firm Brazilian cheese)
  • 3.5 ounces sliced bacon
  • Olive oil
  • Salt


  1. Precook the potatoes in boiling water for 15 minutes.
  2. Bathe them in cold water and let them cool a bit.
