Name: Hmong Sausage with Purple Sticky Rice and Tiger Bite Sauce
Ingredients: 2 Lb Pork Shoulder; 1 lb Pork Belly; 1/4 C Chopped Ginger; 1/4 C Chopped Lemongrass; 1/4 C Garlic; 2 Tsp Thai Chilies; 1/4 C Fish Sauce; 2 Tsp Oyster Sauce; 2 Tsp Salt; 2 Tsp Pepper; 3 C of Gluttonous Rice; 1C of Black Rice; Water; 2 C Cilantro Chopped finely; 2 Tsp Garlic Chopped; 3-4 Thai Chilies; 1/4 C Lime Juice; 2Tsp Fish Sauce; 1Tsp Oyster Sauce; Hmong Sausage; Purple Sticky Rice; Tiger Bite Sauce; Cucumbers

Hmong Sausage

Place pork shoulder and pork belly in a bowl.

Add the chopped ginger, lemongrass, garlic and Thai chilies.

Add the fish sauce, oyster sauce, salt and pepper.

Purple Sticky Rice

Add gluttonous rice and black rice to a bowl.

Check the rice after 25 minutes and add the soaking water.

Pull the rice out of the steamer and pour into a bowl.

Tiger Bite Sauce

Place the cilantro, garlic, Thai chilies, lime juice, fish sauce and oyster sauce in a mortar.

Mash with a pestle until turned into a paste.

To Assemble

Take a scoop of purple rice and put it on plate.

Lay the sausage on skewers over the rice.

Ladle Tiger Bite sauce into a small ramekin.
