HONEY MINI POUND CAKE

This pound cake is as sweet as honey!

Ingredients

CHOCOLATE HONEYCOMB

  • 3.5 oz white chocolate
  • Gold dust

HONEY POUND CAKES

  • 1/2 cup almond flour
  • 1/2 cup + 2 tablespoons oat flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • ¼ tsp cinnamon
  • 1/4 teaspoon ground cardamom
  • 1/3 cup honey
  • 3 tbsp mashed sweet potato
  • 2 tbsp orange juice
  • 1 large egg
  • 3 tablespoons unsalted butter, melted

CREAM CHEESE FROSTING

  • 4 oz cream cheese
  • 1/4 cup butter, softened
  • 1 1/2 cups powdered sugar
  • 1/2 tsp vanilla extract

Steps

  1. For making chocolate honeycomb pieces, melt white chocolate in the microwave or bain-marie. Pour over previously cleaned bubble wrap paper and refrigerate until solid. Brush with gold dust.
