Hot Dog Double Header

It wouldn't be baseball season without a hot tog — or two! Chef Frankie Celenza's recipe for homemade relish and sauerkraut will please any crowd.

Ingredients

Beef Hot Dogs (Blue Team)

  • 4 all beef hot dogs
  • 4 hot dog buns
  • 1/2 cup homemade relish
  • 1/2 cup sauerkraut
  • 2 1/2 tablespoons mustard

Homemade Relish

  • 1 medium cucumber, diced
  • 1/2 onion, finely chopped
  • 1/2 cup apple cider vinegar
  • 1 tablespoon, plus 2 teaspoons kosher salt
  • 3 tablespoons sugar

Pork Bratwursts (Orange Team)

  • 4 pork brats (fully cooked)s
  • 4 slices thick cut bacon
  • 1 tablespoon vegetable oil
  • 4 hot dog buns
  • 1/2 cup onions in sauce
  • 2 jalapeños

Onions in Sauce

  • 2 tablespoons vegetable oil
  • 1 large onion, diced
  • 6 ounces tomato paste
  • 1 teaspoon cornstarch
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon red pepper flakes
  • 3 tablespoons honey
  • Salt and pepper

Steps

  1. Bring a small pot of water to a boil and add the hot dogs. Cook the hot dogs for 4–5 minutes, then remove from the boiling water with tongs.
  2. To assemble: place a hot dog in a bun and top with mustard, relish, and sauerkraut.
