Indian Spiced Rice Pudding
This naturally sweet and dairy-free treat is the perfect sweet treat for either breakfast or dessert.
Ingredients
- 2 cups coconut milk (full fat)
- 2 cups almond milk
- 3 tablespoons honey
- 2 tablespoons maple syrup
- 1/2 cup basmati rice
- 1 star anise
- 2 cinnamon sticks
- 1/4 teaspoon ground cinnamon
- 1/4 cup dried cherries
- Optional: cinnamon for serving
Steps
- Place coconut milk, almond milk, honey and maple syrup in a pot and bring to a boil.
- Add in rice, spices and cherries, and lower to a simmer. Cook uncovered until liquid has absorbed and rice is a creamy consistency, about 20 minutes.
