Kiwi Yogurt Mousse Stripe Cake

Ingredients

Sponge Cake Batter

  • 4 eggs, divided
  • 3/4 cup granulated sugar, divided
  • 1 cup flour, divided
  • 1/2 tablespoon matcha powder
  • Powdered sugar

Yogurt Mousse

  • 1 1/2 cups yogurt
  • 1/2 cup granulated sugar
  • 1 cup heavy cream
  • 1 tablespoon dry gelatin powder
  • 2 tablespoons water

Decorations

  • 2 kiwis
  • Blueberries and blackberries
  • French parsley

Steps

  1. Preheat oven to 350 degrees.
  2. Peel the kiwis. Slice one kiwi into 1/4-inch round pieces. Cut the other kiwi into wedges.
