Lemon Ricotta Pancake in a Rice Cooker
To make a quick and fluffy pancake, look no further than your rice cooker.
- 2 1/2 cups pancake mix
- Zest from one lemon
- 2 2/3 cups skim milk
- 2 cups skim ricotta cheese
- Whipped cream
- Sugared lemon zest
- Whisk together pancake mix, skim milk and ricotta cheese. Add the lemon zest.
- Pour batter into rice cooker pan.
