Lemon Ricotta Pancake in a Rice Cooker

To make a quick and fluffy pancake, look no further than your rice cooker.


  • 2 1/2 cups pancake mix
  • Zest from one lemon
  • 2 2/3 cups skim milk
  • 2 cups skim ricotta cheese
  • Whipped cream
  • Sugared lemon zest


  1. Whisk together pancake mix, skim milk and ricotta cheese. Add the lemon zest.
