Manchego Grilled Cheese With Honey Butter

Made with rich honey butter, manchego cheese and a baguette, this delicious grilled cheese is cooked low and slow.


  • 1 stick butter, softened
  • 1/2 cup honey
  • 1 baguette
  • 1 1/2 cups manchego cheese, grated
  • Foil-wrapped brick (or cast-iron skillet, to weigh down the bread)


  1. Preheat a large nonstick skillet or grill pan over medium-high heat.
  2. With a spatula or hand mixer, blend the butter with honey until soft and well mixed.
