Mango Star Roll Cake

This roll cake is hiding a sweet (mango) surprise!

Ingredients

Whipped Cream

  • 200cc heavy cream
  • 100g sugar

Bavarian Batter

  • 60g granulated sugar
  • 2 egg yolks
  • 120g Mango puree
  • 5g gelatin
  • 30ml hot water
  • 100g heavy cream

Meringue

  • 3 egg whites
  • 50g of granulated sugar

Roll Cake Dough

  • 50g of cake flour
  • 80ml of milk
  • 20g of vegetable oil

  • Meringue

Steps

  1. Combine sugar and heavy cream to make whipped cream. Whip until stiff peaks form.
