Mexican Chocolate Tres Leches Cake

Devils food cake soaked in chocolate milk and topped with mascarpone - I'm sold.

Ingredients

Chocolate Milk

  • 100g Dark Chocolate
  • 1/2 can (14 oz.) sweetened condensed milk
  • 1/2 can (12 oz.) evaporated milk
  • 1/2 cup sour cream
  • 1 Tbsp. unsweetened cocoa powder
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp cayenne pepper

Mexican Chocolate Tres Leches Cake

  • 350g all-purpose flour
  • 450g caster sugar
  • 100g cocoa powder
  • 1 tsp bicarbonate of soda
  • 1 tsp salt
  • 350g unsalted butter, softened
  • 4 large eggs, at room temperature
  • 350ml milk
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp cayenne pepper + extra to dust
  • 1 tsp
  • 1 cup mascarpone

Steps

  1. Add the evaporated milk, sweetened condensed milk, sour cream, cocoa powder, cinnamon, nutmeg and cayenne pepper to a large microwave safe bowl and microwave for 3 minutes.
  2. Add dark chocolate and whisk until melted. Set aside to cool.
