Mushroom and Figs Sandwich

A light vegan sandwich, fit for a giant.


  • 100 gr shiitake mushrooms
  • 2 figs
  • arugula
  • lettuce
  • preferred bread slices. Ciabatta works really well.
  • 1 tbsp dijon mustard
  • 2 tbsp balsamic vinegar
  • 1 tbsp soy sauce
  • 1 garlic clove
  • salt and pepper to taste
  • 2 tbsp olive oil


  1. Put the shiitake mushrooms in water to rehydrate them for half and hour.
  2. Slice the mushrooms and marinate them with balsamic vinegar, soy sauce, 1 chopped garlic clove and olive oil
