Mushroom and Figs Sandwich
A light vegan sandwich, fit for a giant.
Ingredients
- 100 gr shiitake mushrooms
- 2 figs
- arugula
- lettuce
- preferred bread slices. Ciabatta works really well.
- 1 tbsp dijon mustard
- 2 tbsp balsamic vinegar
- 1 tbsp soy sauce
- 1 garlic clove
- salt and pepper to taste
- 2 tbsp olive oil
Steps
- Put the shiitake mushrooms in water to rehydrate them for half and hour.
- Slice the mushrooms and marinate them with balsamic vinegar, soy sauce, 1 chopped garlic clove and olive oil
