Nashville Hot Chicken

You don't need to book it to Tennessee to enjoy super crispy and spicy fried chicken.

Ingredients

Nashville Hot Chicken

  • 1 Chicken
  • 12 cups peanut oil
  • 1 cup buttermilk
  • 3 tablespoons hot sauce
  • 3 large eggs, beaten
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons cayenne pepper
  • 1 tablespoon kosher salt
  • 2 teaspoons ground black pepper
  • Sliced white bread and dill pickle chips, for serving

Dry Brine

  • 1 whole chicken, cut into 10 pieces, breasts cut in half
  • 2 tablespoons kosher salt
  • 2 teaspoons freshly ground black pepper
  • 1 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder

Spicy Finishing Oil

  • 2 tablespoons cayenne
  • 1 tablespoon light brown sugar
  • 2 teaspoons kosher salt
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder

Steps

  1. Heat peanut oil in a deep, heavy pot outfitted with a deep-fry thermometer to 350°F.
  2. Whisk together the buttermilk, hot sauce, and eggs in a medium bowl.
