One Pot Spiralized Zucchini Shrimp Scampi

This easy shrimp scampi is low-carb and high in flavor.


  • 2 tablespoon olive oil
  • 1 pound shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 2 tablespoon freshly squeezed lemon juice
  • 1/2 teaspoon fresh lemon zest
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 3 medium-sized zucchini, spiralized
  • 2 tablespoon parmesan, grated
  • 2 tablespoon fresh parsley, chopped


  1. Heat a large skillet over medium-high heat and add the oil.
  2. Add the shrimp, sea salt, black pepper, and red pepper flakes to the hot oil. Cook, stirring occasionally, until the shrimp is pink and cooked through, about 4-5 minutes.
