Orange Mousse Cake

When it warms up, you need a sweet treat to cool down—and a citrusy, fluffy no-bake cake is just the thing.


Orange gelatin

  • 150 ml orange juice
  • 10 grams sugar
  • 5 grams powdered gelatin

Orange Mousse Cake

  • 3 mandarin oranges
  • 300cc orange juice
  • 50 grams sugar
  • 1 tablespoon lemon juice
  • 1 egg white, beaten until stiff
  • 200 ml heavy cream, beaten until smooth and thick
  • 10 grams powdered gelatin
  • Whipped cream
  • Mint


  1. To make the orange gelatin, combine the orange juice and sugar in a saucepan.
  2. Once mixture comes to a boil, turn off the heat and add the gelatin and mix until dissolved. Set aside to cool.
