Pine Cone Cake

Freezing weather is the perfect excuse to stay in & bake a cake, if you ask us.

Ingredients

Cake

  • 1 cup unsalted butter
  • 1 cup black coffee
  • 2/3 cup cocoa powder
  • 1 cup dark chocolate, finely chopped
  • 1 3/4 cups light brown sugar
  • 4 large eggs
  • 2 large egg yolks
  • 1 1/2 cups flour
  • 2 1/4 tsp baking powder
  • 1/2 tsp fine salt

Icing

  • 2 1/4 cups dark chocolate, around 70% cocoa solids
  • 1/4 cup unsalted butter
  • 1/3 cup light brown sugar
  • 1 3/4 cups heavy cream
  • 2/3 cup sour cream

Decoration + Assembly

  • 10 1/2 oz good quality milk chocolate
  • Powdered sugar

Steps

  1. Preheat oven to 350 degrees. Grease the bottom of three 7-inch round cake pans and line with parchment paper.
  2. In a saucepan set over medium heat, add the butter and coffee. Stir occasionally until the butter is fully melted.
