Ingredients: 2 pounds starchy potatoes (like Russet, Idaho or Yukon gold), clean and unpeeled; 1-2 tbsp kosher salt; 1 cup diced soft butter; 1 cup heavy cream; 1 garlic clove; thyme and rosemary to taste; nutmeg to taste; salt and pepper to taste

Garlic & Herb Mashed Potatoes

Put the potatoes in a large pot with cold water and salt.

Bring to a simmer, cover and cook for 25-30 minutes (until well done).

Drain the potatoes and peel while still warm.

Put them through a potato ricer into a large bowl and let it rest.

Meanwhile, in a saucepan brown the butter with the garlic, thyme, rosemary and nutmeg.

Add the heavy cream and heat for 5 minutes. Don't let it split.

Strain the cream mixture and add to the warm potatoes.

Stir well to create a soft and creamy pureé.
