Roasted Vegetables with Burrata & Herbs

  • Bunch of rainbow carrots
  • 6 large Beets red and yellow
  • 2 Zucchinis
  • 2 Heads of Romanesco
  • 4 Red Bell Peppers
  • Rosemary, plucked
  • Basil, chiffonade
  • Grapeseed oil
  • 1 T onion and garlic powder
  • Salt and pepper to taste
  • Burrata


  1. Preheat oven to 400 degrees
  2. Cut carrots, zucchinis, bell peppers into strips and place on a sheet pan.
