Rosemary and Garlic Sweet Potatoes

- 3 medium sweet potatoes or yams, washed clean
- 1 large sprig rosemary
- 3 tablespoon unsalted butter
- 2 tablespoon olive oil
- 2 garlic cloves, minced or grated
- Salt and pepper, to taste
