Rosemary and Garlic Sweet Potatoes

  • 3 medium sweet potatoes or yams, washed clean
  • 1 large sprig rosemary
  • 3 tablespoon unsalted butter
  • 2 tablespoon olive oil
  • 2 garlic cloves, minced or grated
  • Salt and pepper, to taste
  • Freshly grated nutmeg, to taste


  1. Preheat oven to 425°F.
  2. Using a mandoline, thinly slice the sweet potatoes, about 1/4 inch thick, leaving the skin still on.
