Salmon Bagel

Ingredients

CURED SALMON

  • 400 grams salmon (sushi grade)
  • 100 grams kosher salt
  • 70 grams sugar
  • dill to taste
  • black pepper to taste
  • 30 ml vodka (optional)
  • grated lime zest

RED ONION PICKLES

  • 1 red onion
  • 10 peppercorns
  • 1 cup vinegar
  • 1/2 cup water
  • salt to taste
  • 1 tbsp sugar

BAGEL

  • cream cheese
  • red onion pickles
  • 2 tbsp capers
  • 1 bagel

Steps

  1. mix the salt, sugar and spices.
  2. in a pirex or glass tupper place half the salt/sugar mixture, put the salmon on top and cover with the remaining mixture.
