Salmon Bagel

Ingredients
CURED SALMON
- 400 grams salmon (sushi grade)
- 100 grams kosher salt
- 70 grams sugar
- dill to taste
- black pepper to taste
- 30 ml vodka (optional)
- grated lime zest
RED ONION PICKLES
- 1 red onion
- 10 peppercorns
- 1 cup vinegar
- 1/2 cup water
- salt to taste
- 1 tbsp sugar
BAGEL
- cream cheese
- red onion pickles
- 2 tbsp capers
- 1 bagel
Steps
- mix the salt, sugar and spices.
- in a pirex or glass tupper place half the salt/sugar mixture, put the salmon on top and cover with the remaining mixture.
