Apricot Glazed Chicken
Crave a bit of sweet with your savory? Make this skillet-roasted chicken with a fruity glaze and almond garnish.
Ingredients
- 8 bone-in, skin-on chicken thighs
- 1 teaspoon kosher salt, plus more for seasoning
- 1 teaspoon black pepper, plus more for seasoning
- 1 tablespoon sweet paprika
- 2 tablespoons olive oil
- 1 tablespoon unsalted butter, or more olive oil
- 1 small yellow onion, thinly sliced
- 4 garlic cloves, minced
- 2 tablespoons low-sodium tamari or low-sodium soy sauce
- 1/2 cup apricot jam/preserves
- Zest of 1 lemon
- 1/2 cup white wine
- 1/4 cup dried apricots, finely chopped
- Dry roasted almond slices, lemon zest and chopped Italian parsley for garnish
