Stuffed Mushrooms

Sauce so good, your plate will look like it was never used.

Ingredients

  • 4 large portobello mushrooms
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 onion, sliced
  • 1 yellow bell pepper, sliced
  • 2 cloves garlic, sliced
  • 1 cup vegetable stock
  • 1/2 cup sun-dried tomatoes
  • 1 cup heavy cream
  • 1/2 cup plus 2 tablespoons Parmesan cheese, grated
  • 2 cups spinach, cooked
  • 4 ounces goat cheese, crumbled
  • 1 tablespoon chili flakes

Steps

  1. Preheat oven to 375 degrees.
  2. Heat a grill pan to medium heat. Remove stem from center of mushrooms. Brush with olive oil and season with salt and pepper.
